Did some burgers with left over smoked brisket in them tonight at work. Fried egg and bacon on top. They sat for an hour after we had a string of runs come in

Oooh! That sounds good! I bet that smoked brisket and burger patty would also go good topped with carmelized onions and served on a brioche bun.

So...one of the boys challenged me to a Laotian food throw-down. I didn't know anything about Laotian food and had never tried it; but, I wasn't about to let that stop me! He told me what the typical dishes were and I made it happen. I even went and bought a traditional bamboo rice steamer basket and a clay mortar and pestle from a Lao grocery store so that I could do it up right.

Tonight's verdict is -- WIN!

He said that "for a non-Laotian" it was "impressive". His only feedback was that I could have minced the chicken even smaller and that the green papaya salad was too spicy. But, everyone else scarfed it down and got second helpings, so it must not have been bad. The mango coconut sticky rice was really good. I had a lot of fun making this meal.

Khao Niao - Sticky rice





Jeow Sohm - Laotian hot sauce





Khao Niao Mamuang - Mango coconut sticky rice (dessert)





I even got my homeboy something to wash it all down with!

That looks good.

Did a smoked meatloaf last shift, with veggies a potatoes and a mixed kale/shredded Brussel sprout Salad mix.

Everyone doubted the smoked meatloaf. I was happy with it for the first time I cooked it, and a wood fire grilled steak from Another meal...
